It would be as difficult to think of a food operation, in particular a ‘mass food operation’ which didn’t standardly employ a commercial vacuum packer or vacuum sealer. At the bottom end of the market, the ‘vacuum’ provided by one of these pieces of equipment, can be little better than can be gotten by squeezing the air out by hand. A commercial standard vacuum packaging machine or vacuum sealer operates at a pressure of -0.8 bar minimum.
